Sometimes we all have to get a family meal on the table in a matter of minutes. While we don’t condone sandwiches on a daily basis for dinner or supper, whichever you call it in your area, we believe it doesn’t hurt on an occasional basis. For a quick, hearty meal try these Easy Meatball Sandwiches served with fresh carrot and celery sticks. For a quick and easy dessert, serve the fondue below with pieces of cake or fresh fruit. This is a quick, easy, and yummy meal.

EASY MEATBALL SANDWICHES

This recipe is quick and easy because it uses meatballs from the grocer’s freezer.

24 frozen meatballs
1 jar spaghetti sauce with garlic and onion
2 cups shredded mozzarella cheese
4 (6-inch) hoagie rolls
shredded lettuce, optional

Thaw meatballs in the microwave for 1 to 2 minutes. In a medium saucepan, heat the meatballs with the spaghetti sauce for about 15 minutes, stirring occasionally. Open hoagie rolls and lay out on platter. Place 6 meatballs on the bottom of each roll. Add a little sauce over the meatballs. Top with the shredded mozzarella cheese and add lettuce, if desired.

RASPBERRY FLAVORED CHOCOLATE FONDUE

3/4 cup heavy cream
pinch salt
6 oz milk chocolate, chopped
6 oz semisweet chocolate, chopped
2 1/2 tbsp raspberry extract
1 tbsp corn syrup

In a small saucepan combine the cream and salt. Bring mixture to a boil and remove from heat. Add milk and semisweet chocolates to the saucepan mixture. Cover saucepan and let sit for 3 minutes. Remove the cover and whisk mixture until smooth. Whisk in raspberry extract and corn syrup. Serve immediately with pound cake or angel food cake cubes or with fruit. Stir the fondue often and reheat if necessary.

NOTE: It is easy to change the flavor by substituting your favorite flavored extract for the raspberry extract listed.
